Makes 2 sandwiches
- 2 brioche buns
- 1 cup Just Egg
- or
- 2 Just Egg Folded
- 1 yellow onion, thinly sliced
- Steak fries, frozen store-bought or from scratch
- 2 slices plant-based cheese
- Just Chipotle Mayo

Caramelize the onion
Slowly cook the sliced onion in a sauté pan along with 1 tablespoon of oil and a pinch of salt over medium-low heat, until softened and caramelized. Stir only occasionally.

Roast the steak fries
Roast a generous handful of steak fries according to the package directions, if store-bought. If making from scratch, roast ¼-inch-thick wedges of russet or gold potatoes in a 425°F (220°C) oven until tender and golden-brown.

Cook the Just Egg
If using Just Egg Folded, heat up in a toaster, skillet, microwave or air fryer according to the directions on the box.
If using Just Egg, scramble (like an egg) in non-stick skillet over medium heat with a bit of oil. Stir occasionally, letting it set into large curds that will hold together nicely in a breakfast sandwich. Once the liquid is cooked through, remove from the heat.

Assemble the sandwiches
Lightly toast the brioche buns, then spread both halves with Just Chipotle Mayo. Start the sandwich with a big pinch of caramelized onions. Layer on the Just Egg and a slice of cheddar cheese. Arrange steak fries on top of the cheese. Season with salt and pepper. Close the sandwich and enjoy immediately – or take it to-go.
