Both chickpeas and mung beans are considered healthful ingredients. However, mung beans are higher in protein and carbohydrates while chickpeas are higher in fat. The macronutrient ratio (protein: carbohydrate: fat) of each is: 21:65:14 for chickpeas and 27:70:3 for mung beans. Mung beans are more similar to eggs in a couple of important ways, making them an ideal egg replacer. They have many of the same amino acids as eggs, they are a natural emulsifier and their protein behaves in an egg-like way in recipes.

How do I scramble JUST Egg?

Like an egg: Preheat a nonstick sauté pan over medium heat, along with a small amount of oil or butter (optional). Pour desired amount of JUST Egg into the hot pan. As the JUST Egg begins to cook and set, use a rubber spatula to gently pull the mixture across the pan and turn over toward the center, forming large, soft curds. Continue pulling and lifting the cooked egg toward the center of the pan until the mixture looks completely cooked and none of it looks liquid. Remove from heat and enjoy immediately. Heat in a toaster, skillet, oven, microwave or air fryer, according to the box directions.
Toaster: Place in a standard toaster and heat on high for 6 ½ minutes.
Skillet: Warm a bit of oil in a non-stick skillet over medium heat. Cook for 5 minutes and flip halfway through.
Oven: Preheat oven to 375°F. Place JUST Egg on a parchment-lined baking sheet and bake for 15 minutes.
Microwave: Place JUST Egg on a microwave-safe plate and cover with a paper towel. Heat on high for 45 seconds. Flip and heat on high for an additional 30 seconds. (Instructions based on 1500W. Cooking times may vary by microwave.)
Air fryer: Coat basket lightly with oil. Put JUST Egg in the air fryer at 400°F for 8 to 10 minutes, flipping halfway through.
