Protein banana ice cream
Serves 1-2
- ½ cup (40g) Just One
- 3 very ripe frozen bananas
- 1 tablespoon peanut butter or almond butter
- 2 teaspoons vanilla extract or paste
- ¼ to ⅓ cup plant-based milk or water
- 1 tablespoon maple syrup (optional, to sweeten)

Add the ingredients to a blender
Add the bananas, nut butter, vanilla and ¼ cup of the milk or water to a high-speed blender or food processor. Blend until the bananas are broken down a bit, then add the Just One and immediately continue blending.
Try these flavor variations or come up with your own.
Chocolate
+ ¼ cup cocoa powder
Mint chip
+ ⅓ cup fresh mint
+ 2 to 3 tablespoons chopped chocolate
Strawberry
+ 1 cup frozen strawberries, omit the nut butter and use full-fat coconut milk for the liquid portion

Blend until smooth
Blend until smooth and creamy, scraping the sides as needed. The mixture will be very thick. If needed, add additional milk or water 1 tablespoon at a time. Taste and add maple syrup if needed to adjust the sweetness.

Enjoy immediately or freeze for later
Enjoy immediately with your favorite toppings, or transfer to a container and freeze for later. When ready to enjoy, remove the banana ice cream from the freezer and let it soften for 10 to 15 minutes before scooping.
