With this stir-fry recipe, you’ll be surprised by how the simplest ingredients can produce such incredible flavor. All you need to do is chop some bell pepper, onion and garlic, scramble some Just Egg and bring it all together with a savory, fermented black bean sauce.

Fermented black beans, also called salted black beans, fermented black soybeans, dòuchǐ or dau-see, are an incredibly versatile ingredient incorporated into many Chinese dishes for their unique, umami flavor. They’re available in most large grocery stores and Asian markets, but if you can't find them in stores, you can always order them online. Then, you can make these easy stir-fried vegetables and similar variations for weeks of cheap and incredibly delicious meals, whether a quick, healthy lunch or an easy weeknight dinner. This vegan stir-fry is very tasty when served with warm rice, but you can also pair it with wheat or rice noodles, or enjoy it on its own.

  • cup (50g) green bell pepper, chopped large
  • cup (50g) onion, chopped large
  • 1 clove garlic, sliced
  • 1 teaspoon (5g) fermented black beans
  • 1 to 2 teaspoons (5 to 10g) soy sauce
  • Oil, for stir-frying

Cook the onion, bell pepper and garlic

Cut the onion and green pepper into large chunks and slice the garlic. Heat a wok or nonstick skillet over high heat and add 1 teaspoon of oil. Stir-fry the onion and bell pepper chunks until slightly softened. Add the garlic and fermented black beans and stir-fry together for another minute. Remove from skillet and set aside.

Scramble the Just Egg

Egg

Return the pan to the heat, add 1 teaspoon of oil and decrease heat to medium. Pour in the Just Egg and scramble like an egg. Stir occasionally to redistribute the liquid while still letting the Just Egg set into large, soft chunks.

Stir-fry everything together

Once the Just Egg is fully cooked through, mix in the cooked vegetables. Add soy sauce to taste. Stir-fry everything together until warm. Serve with rice.
