These protein-packed stuffed biscuits feature flaky plant-based biscuit dough filled with Just Egg, vegan breakfast sausage and creamy sweet potato for a handheld breakfast that’ll keep you satisfied. While we love the classic savory combination of eggs and sausage, feel free to swap in your favorite vegetables, plant-based cheese, or seasoning blends.

  • 1 16-oz. can plant-based biscuit dough (see note)
  • 1 medium sweet potato
  • 8 plant-based breakfast sausages (any shape)
  • 2 tablespoons pourable Just Egg (optional, for egg wash)
  • 2 teaspoons everything bagel seasoning, poppy seeds or sesame seeds (for garnish)

Roast the sweet potato

Preheat your oven to 400°F. Lightly scrub the sweet potato clean. Wrap in foil, place on a baking sheet and bake for 45 to 60 min, until tender all the way through when pierced with a small knife. Final cooking time will depend on the size and shape of the sweet potato. Remove from the oven and set aside. When it’s cool enough to handle, remove the skin and mash the sweet potato flew with a fork in a bowl. Set aside.

Note: You can cook the sweet potato using any preferred method for this recipe.

Cook the fillings

In a skillet or microwave, defrost the Just Egg Folded and cook the sausage according to the package directions. Once cool enough to handle, tear or chop the eggs and sausages into small chunks or long strips, depending on what shape you’d like to roll your biscuits into. Combine in a bowl and set aside until you’re ready to assemble the biscuits.

Prepare the biscuit dough

Lightly grease a large baking sheet and set your oven to 375°F. Open the can of biscuit dough and flatten a piece of dough with your hands or a rolling pin into a rectangular oval, making sure that it’s an even thickness all the way to the edges.

Note: Plant-based biscuit options are available at most grocery stores, including from the Pilsbury, Annie’s and Immaculate Baking brands. Do a quick check of the ingredient label to see if the ingredients include dairy-based butter or other non-plant-based ingredients.

Fill the biscuits

To the center of each round of dough, add about 2 tablespoons of the mashed sweet potato. Top it with about ⅓ cup of Just Egg and sausage (or as much as you think you can fit in the roll.) Roll one side of the dough up and over the fillings. Pinch the ends to seal closed. Place the roll seam-side-down on the baking sheet. Repeat with the rest of the dough.

Brush with plant-based egg wash (optional)

In a small bowl, whisk together the 2 tablespoons pourable Just Egg with 1 tablespoon of water to make an egg wash. Use a pastry brush to coat each biscuit with the egg wash and sprinkle with everything bagel seasoning, poppy seeds or sesame seeds.

Note: If you don’t have pourable Just Egg, substitute 2 tablespoons of plant-based milk mixed with 1 tablespoon of maple syrup. Read more about egg wash substitutes.

Bake the biscuits

Bake the tray of biscuits at 375°F for 18 to 22 minutes, until golden-brown. Let them cool briefly before enjoying. You can wrap these in foil, freeze and reheat in the microwave for about 60 to 90 seconds.
