Tater tot sheet pan breakfast
Serves 4
- 4 Just Egg Folded, chopped from frozen into bite-sized cubes
- 1 16oz bag of frozen tater tots, regular or sweet potato
- 1 medium head of broccoli, cut into small florets (about 2 cups)
- Curly parsley, minced
- Salt & pepper
- Sprinkle of nutritional yeast or shredded plant-based cheese (optional)

Start cooking the tots
Preheat oven to 425°F. Spread the tater tots out on a large baking sheet (about 11x17) cook for 15 min.

Prep the broccoli and Just Egg Folded
While the tater tots start cooking, cut the broccoli into small florets. In a medium bowl, toss the florets with a bit of olive oil, salt and pepper. Chop the Just Egg Folded into cubes with a sharp knife. If the frozen egg is too hard to cut, simply defrost slightly it in a toaster for a minute or microwave for 30 seconds.

Add the broccoli and egg to the pan
After the tots have cooked for 10 minutes and are starting to turn golden, pull the sheet pan from the oven and push the tots to one side of the pan. Spread the Just Egg Folded and broccoli out on the other side of the baking sheet. Roast for another 15 minutes, until the broccoli is tender and browned in spots, and the tots are golden-brown and crunchy.

Garnish and serve
Remove from the oven and let it cool for 3 to 5 minutes. You can either mix everything together or keep the ingredients separate for serving. Sprinkle with some minced parsley to serve, along with some shredded plant-based cheese or nutritional yeast if desired.
