Sandwiches that keep it simple.
Tea sandwiches
Ingredients
Soft sandwich bread
Cucumber, thinly sliced
Avocado
Just Egg Folded
Layer sandwich bread with lightly mashed avocado, cucumber and Just Egg Folded. Slice off crusts if desired – but don’t let them go to waste! Even better: Cut into fun shapes with cookie cutters.
English muffin sandwich
Ingredients
English muffin (we like Dave’s)
Plant-based butter (we like Miyoko’s)
Just Egg Folded
An instant classic. Lightly toast your English muffins and spread with plant-based butter. Top with Just Egg Folded.
Sweet and savory waffle sandwich
Ingredients
Frozen whole-grain waffles
Maple syrup or naturally sweetened jam
Plant-based butter (we like Miyoko’s)
Just Egg Folded
Spread the waffles lightly with plant-based butter (and jam, if using) and stack with Just Egg Folded to make sandwiches. Cut in half or in quarters to serve, with maple syrup for dipping.

Hash brown breakfast stack
Ingredients
Frozen hash brown patties
Ketchup
Just Egg Folded
Use hash browns as the “bread” in these tasty bites. Even better: Try with sweet potato hash browns. Simply heat your hash browns and Just Egg Folded according to the package directions, then stack your sandwiches and add ketchup. You can make these open-faced with one hash brown or closed with two hash browns. Slice in half for easier bites.
Home fry bites
Ingredients
Potatoes, small- to medium-sized
Just Egg Folded
Italian seasoning
Slice the potatoes into thin rounds, toss with olive oil and roast or air-fry until golden brown. Sprinkle with salt and Italian seasoning. Peel or slice the JUST Egg Folded open to make thinner slices. Cut the Just Egg to roughly match the size of your potato slices. Create small stacks by alternating slices of potato and JUST Egg, four to six slices high.
Brown rice breakfast bowl
Ingredients
Brown rice (homemade or from frozen)
Avocado, cubed
Soy sauce or ketchup
Just Egg Folded
Cook and chop the Just Egg Folded into bite-size pieces. Fill a small bowl with desired serving of rice, cubed avocado and JUST Egg Folded. Serve with a bit of soy sauce or ketchup.

Breakfast tacos
Ingredients
Small flour or corn tortillas
Tomatoes or pico de gallo
Just Egg Folded
Cut the Just Egg Folded into halves or strips to fit the size of your tortillas. Garnish with chopped or sliced tomatoes, or pico de gallo. Fold into tacos or roll into mini burritos.
Breakfast pita pocket
Ingredients
Whole-wheat pita bread
Tomato, sliced
Avocado
Just Egg Folded
Spinach (optional)
Cut your pita bread in halves or quarters, depending on the size. Stuff the middle with Just Egg Folded, tomato and avocado. If you have room, fresh spinach leaves add a lovely crunch.
Breakfast tortilla hack
Ingredients
Large flour tortillas
Sweet potato, cooked and mashed
Hummus or mashed avocado
Fresh spinach
Just Egg Folded
Preheat a skillet and lightly grease. Lay your tortilla on a flat surface and arrange each filling ingredient in one quarter of the tortilla: a bit of mashed sweet potato, a smear of hummus or mashed avocado, a few leaves of fresh spinach and a cooked Just Egg Folded. Fold the tortilla in half over the ingredients, then fold in half again to make a neat triangle. Transfer to the heated skillet and cook each side until golden, about 2-3 minutes per side.
